It’s prime blackberry picking season in the UK, and there’s a healthy crop down our road, just 20 steps from the doorstep there are lots of lovely black berries forming. The season started early this year, but I think it will last longer than normal as there are still green berries and some flowers forming.
When there’s such a glut, I’m always looking for new things to cook and today, I thought that I would try some Granita. If you start this in the morning, you can have it for dinner. It’s a great dessert, but you could also have it for the palate cleanser between courses.
Serves 4
Ingredients:
6 tbsp honey
300 ml water
900g blackberries
3 tbsp lemon juice
Pinch of salt
How to guide:
Add water and honey to a pan and cook over a medium heat until the honey melts and it begins a mild boil. Remove from the heat and allow to cool.
Put all ingredients including the honey water into the food processor and blitz.
Pour into your freezer tray via a sieve to remove the seeds, squeeze out any remaining juice by using a wooden spoon to push it through the sieve
Cover using cling film or a freezer bag and place in freezer for 3 hours
Scrape with a fork to break up the frozen particles, the return to the freezer until ready to devou
