Hope you have been reading my other blogs on Attitude Wellbeing. As per my previous blog, I am documenting my breakfasts for the next week, to show everyone it’s okay to eat whatever you want for breakfast. Where is it written that breakfast must be a bowl of cereal everyday? I like to increase my nutrient intake, eating as many veg and fruit as I can during the day. Today I went for a vegetarian brunch. You could serve this as a side dish with your dinner or lunch. My husband suggested adding a chicken breast, sometimes it’s just nice to eat vegetables.
Serves 1
Preparation time and cooking: 20 minutes
Ingredients:
½ onion, chopped
4 mushrooms, chopped
½ red pepper, chopped
1 garlic clove, chopped
1 tsp fresh rosemary, chopped
½ can of cannellini beans, rinsed
Large handful of kale, chopped and stems removed
Sea salt, pinch
Method:
Add your oil/ghee/fat to the pan and heat to a medium temperature. Add the onions, after a few minutes, add the mushrooms, red pepper and garlic. After about 5 minutes add the rosemary and the beans.
While the above is cooking, de-stalk the kale and rub with the sea salt, it helps to tenderise the kale and adds a bit of salt to your meal.
You will notice that the beans will start to break down, at this stage add the kale and cook until the kale is to your liking.
That’s it, nothing exciting, but a light, nutritious meal.
