Curried Cauliflower

Cauliflower is the underdog of the cruciferous family, but it is still filled with loads of nutrients. It contains Vitamin C, Vitamin K, Vitamin B6 & Magnesium, along with many others. The spice mix contains turmeric which is an anti-inflammatory

Serves 4

Ingredients:

1 Cauliflower

1 Tbsp Olive Oil

Salt and Pepper

Spice mix:

2 tsp. ground cumin

2 tsp. ground coriander

1 tsp chilli powder (or ½ red chilli finely chopped)

2 tsp. turmeric

4 garlic cloves, finely grated

2 tsp. fresh ginger, finely grated

2 tsp. tomato puree

Juice ½ lemon

Instructions:

Pre-heat the oven to 190°C/Fan 170°C/Gas 5

Combine all the spice mix

Break the cauliflower up into bite size pieces then mix with the spices until all the white has gone. Put the Cauliflower into a roasting dish, add the olive oil by drizzling it over the veg. Then place in the oven.

To stop the cauliflower from dying out, out a small bowl of water at the bottom of the oven (about 100ml of water should do it.)

This could take up to an hour to cook, it depends on your oven, so keep an eye on it, and test the cauliflower with a sharp knife, keep cooking until you are happy with the consistency.

Season and then serve, goes well as an side dish to a curry or as part of a roast dinner (as seen in the photo above.
