Tomato and Pepper paste/puree

6 roasted red peppers (300g Jar)

260g Sundried or sunblush tomatoes

2-3 tbsp oil (from the tomatoes)

Zest of 1 lemon

These are all the ingredients you need, the measurements can be dependent on the jar size, don’t waste anything.

Put all ingredients into a blender and blitz into a fine paste, that’s it done!

This is a great fridge staple. I use it as a paste for Pizza, Stomboli or Calzone; a tomato puree replacement. It is also great as a dip.

If you want to, you could roast 6 red peppers in the oven with a drizzling of oil for 30-35 minutes on 200ºC/fan 180ºC/gas 6. But most supermarkets sell a jar or roasted peppers, just look for the one with not too many additives.
