Healthy Halloween Pumpkin Pancakes – a golden, nourishing autumn recipe packed with warming spices and a little seasonal magic. Perfect for cosy October mornings or a mindful Halloween brunch.

A Cosy, Spooky Start to Your Day
As the nights draw in and the pumpkins start appearing on every doorstep, I love finding new ways to bring a little seasonal magic into my kitchen. These pumpkin pancakes are one of my favourite October recipes — golden, nourishing, and just a little bit spooky!
They’re full of warming spices and feel like a comforting hug on a chilly morning (or evening… because pancakes aren’t just for breakfast!). Pumpkin is naturally rich in fibre, antioxidants, and vitamin A, and pairs beautifully with turmeric, cumin, and coriander — giving this recipe a little immune-boosting twist.
So while the trick-or-treaters are filling up on sweets, you can enjoy something that tastes indulgent and feels good for the body.

🕸️ Ingredients (Serves 4)
150g pumpkin, skinned, deseeded and cut into small pieces
100g mixed seeds
3 large eggs
½ tsp ground coriander
½ tsp ground cumin
½ tsp ground turmeric
Pinch of sea salt
50g flour (red lentil, gram/chickpea or quinoa flour all work well)
1 tsp baking powder
👻 Method
Soften the pumpkin. You can either roast it in a preheated oven at 170°C / 325°F / Gas Mark 3 for around 30 minutes, or simmer it in boiling water for about 20 minutes, then drain. Whichever you choose, make sure it’s beautifully soft before allowing it to cool.
Blend it all together. Pop the cooled pumpkin into a blender and blitz until smooth. Add the mixed seeds, eggs and spices, then blend again. Finally, add the salt, flour, and baking powder, and give it one last whizz.
If the mixture feels a little thick, add another egg. The batter can be kept covered in the fridge until you’re ready to cook.
Cook the pancakes. Heat a little oil, ghee, or butter in a frying pan over a low heat. Spoon in two dessertspoons of batter per pancake. It’s quite thick and sticky, so shape them gently with the back of your spoon.
Cook for around 1½ minutes each side, until golden and firm. A fish slice works perfectly for flipping without breaking. You should end up with about 8 pancakes.

Now for the fun part — toppings! This is where you can really get creative:
Bacon and maple syrup for a sweet-and-salty Halloween breakfast.
Pears and blackberries for something autumnal and juicy.
Lemon juice and honey for a light, zesty twist.
Asparagus and beansprouts if you fancy something savoury and unexpected.
Or go full Halloween with a swirl of dark berry coulis (it looks deliciously ghoulish!) or a sprinkle of cinnamon for that warm pumpkin-spice feeling.
